Origin: The variety was bred in 1970 by the Staatliche Lehr- und Versuchsanstalt für Wein- und Obstbau in Weinsberg. In 1999, protection of the variety was applied for at the Bundessortenamt.

Interbreeding: Lemberger × Cabernet Sauvignon clone Levadoux.

Characteristics: This variety has a medium to early bud burst time and grows medium strong and largely upright. Its growth is slightly bushy and the internode spacing is medium to low. It tends to show medium side shoot growth and develops slightly more water shoots. The red wine variety produces high safe yields due to its flowering safety. The achievement of medium to high grape weights can lead to an unfavourable leaf/fruit relation. Therefore, high foliage walls (at least 1.10 - 1.2 m) are required to compensate for this. Despite thinning measures, the grapes remain quite loose in structure. The variety ripens very late. It is also characterised by high drought tolerance and botrytis resistance, but has a slight susceptibility to grape stem rot at the tips of the grapes. It shows a high must weight performance with a medium to high must acidity. It has good to very good wood maturity and high winter frost resistance.

Grape: The grape is medium to large, shouldered and loosely structured. The berries are round, small to medium sized and blue-black in colour with a fruity berry flavour.

Wine: Wines from the Cabernet Cubin variety are characterised by their strong colour and offer a wide range of fruit flavours, including cassis and others. They are also rich in tannins. The optimal ripeness of these wines requires a certain period of development and they have an exceptional storage capacity. Due to its complexity and longevity, the variety represents an international wine style and is particularly well suited for ripening in wooden barrels or barriques. Due to its characteristics, this variety is also a very good cuvée partner and can help to produce complex and balanced wines.

Cultivation: Due to its late ripeness, it is important to grow Cabernet Cubin in good vineyard sites. There are no special demands on the soil.
